I am surprise by the first bite, it is taste of Soya instead of egg.  Traditionally tarts are made of eggs. Le cafe tarts are make from soya. The soya texture is slightly firm than soya bean curb but completely the same taste as soya pudding. The pastry is crusty and fresh.
